Produção de bebidas espirituosas tendo como base a destilação artesanal

Abstract

A empresa Tomorrow’s Recipe, Lda. é uma microdestilaria, artesanal, produtora de bebidas espirituosas, que pretende expandir o seu negócio a nível nacional e internacional. A presente dissertação teve como objetivo a produção das diferentes bebidas espirituosas e projetar um laboratório nas instalações, uma vez que se trata de uma empresa recente sem estruturas laboratoriais. O laboratório permitirá a conceção de novos produtos e a realização análises físico-químicas e microbiológicas aos produtos. Foram produzidos diferentes produtos, gins e vodka, dois dos quais são da autoria do mestre destilador e os restantes para clientes de acordo com as suas escolhas. Foram determinadas as tarefas a executar no laboratório e elaborado um plano para a sua construção e montagem. Neste, está incluída a planta do espaço, o mobiliário e os equipamentos e materiais necessários para as funções laboratoriais. Para averiguar da viabilidade económica do projeto, foram estudados os Fluxos Financeiros e os Balanços Totais com base nos custos de investimento iniciais, nos gastos de manutenção anuais e nos benefícios gerados, calculados anteriormente. Foram, também, calculados os indicadores da viabilidade económica, sendo estes o Valor Líquido Atual, a Taxa Interna de Rentabilidade, a Anuidade Equivalente e o Tempo de Recuperação. Com a avaliação destes fatores foi determinado que o projeto é viável, para a taxa mínima de atratividade de 10 %, de retorno financeiro a longo prazo, sendo estes de, aproximadamente, 8 anos.

Tomorrow’s Recipe, Lda. Is a micro-distillery that produces artisanal spirits, which aims to expand it’s business both nationally and internationally. The purpose of the present dissertation was the production of different spirits and to design a laboratory in the facilities, since it is a recent company without lab structures. The laboratory allows the investigation of new products and the accomplishment of physical-- -chemical and microbiological analysis of the products. Different products were produced, two of which were created and belong to the master distiller and the rest for costumers, according to their choices. It was determined the different tasks to be performed in the laboratory and it was designed a lab construction and assembly plan. This include the space plan, the furniture and the equipment and materials needed to the lab function. To determine the economic viability of the project, the Financial Flows and the Total Balance were studied based on the initial investment costs, annual maintenance costs and benefits generated, previously calculated. The economic viability indicators were also calculated, being this the Net Present Value, the Internal Rate of Return, the Annual Equivalent and the Recovery Time. From these it was determined the viability of the project, to the minimum rate of 10 % of attractiveness, of long-term financial return, which are, approximately, 8 years.
