Resumo(s): | Particle properties in nanoemulsions are extremely relevant to control their functionality and, consequently, their applications. The careful selection of formulation parameters (e.g., composition, emulsifier/oil concentration, and processing operations) results in nanoemulsions with different particle characteristics such as size, concentration, charge, physical state, and interfacial properties. Nanoemulsions' particle properties will determine their physicochemical properties, for example, their rheology, stability, digestibility, release mechanisms, and optical properties. This chapter highlights the influence of nanoemulsions' preparation (e.g., the selection and concentration of ingredients and processing operations) on their particle properties and analyzes the most important methodologies that can be used for particle property evaluation. |
