dc.description.abstractA utilização de revestimentos edíveis vem dar resposta a inúmeros problemas existentes na indústria alimentar, como à manutenção da qualidade dos alimentos ao longo do tempo, por meio do isolamento ou separação de diferentes componentes de um mesmo produto. Assim, recorrendo a esta solução, deverá ser possível realizar a incorporação de componentes alimentares de baixa atividade de água, como bolachas e cereais de pequeno-almoço, em matrizes hidrofílicas, como preparados de fruta e matrizes lácteas, sem ser necessária a utilização de embalagens de dois compartimentos, que são atualmente utilizadas, pois permitem separar os componentes da matriz até ao momento de consumo, de forma a minimizar a perda de textura por amolecimento indesejado. Assim, foram testados cereais de diferentes tamanhos, uma vez que um dos objetivos iniciais deste projeto passa por se poder utilizar componentes de reduzida dimensão, de forma a se conseguir aplicar, numa certa percentagem, o maior número possível de cereais uniformemente revestidos numa matriz como o iogurte. Avaliaram-se diversos tipos de revestimentos, principalmente, à base de manteiga de cacau, chocolate, ceras de abelha e carnaúba, para aplicação em componentes alimentares como cereais de pequeno-almoço ou pedaços de fruta. No final do projeto, obtiveram-se algumas formulações que efetivamente funcionaram e que revestiram uniformemente os componentes, impedindo a entrada de água nos mesmos, mantendo a sua crocância e textura características e demonstrando alguma resistência à compressão por parte de um texturómetro, face ao contacto com algumas matrizes hidrofílicas, nomeadamente, preparados Frulact com diferentes ºBrix, iogurte e gelado. Além disto, foi possível tirar conclusões relativamente a outros fatores, como a carga microbiológica presente em vários componentes revestidos e a variação da porosidade interior e exterior dos mesmos. Este último parâmetro foi medido com recurso a um microscópio eletrónico de varrimento, onde foi possível obter imagens da superfície de alguns tipos de cereais, conseguindo-se analisá-la em termos de rugosidade e porosidade. Já a porosidade interior dos referidos componentes foi avaliada de forma visual.por
dc.description.abstractThe utilization of edible coatings responds to numerous problems existing in the food industry, such as maintaining the quality of food over time, through the isolation or separation of different components of the same product. Thus, using this solution, it is possible to incorporate food components, such as cookies and breakfast cereals, in hydrophilic matrices, for example fruit preparations and dairy matrices, without the need to use two-compartment packaging, which is currently used because they allow the separation of the components of the matrix until the moment of consumption, in order to minimize the loss of texture due to unwanted softening. Thus, cereals of different sizes were tested, since one of the initial purposes of this project was to be able to use small components, in order to incorporate, in a certain percentage, the largest possible number of uniformly coated cereals in a matrix-like yogurt. Several types of edible coatings were evaluated, mainly based on cocoa butter, chocolate, beeswax, and carnauba wax, for application in food components such as breakfast cereals or fruit sticks. At the end of this project, some formulations effectively worked and uniformly coated the components, preventing water from entering in those, maintaining their characteristic crunchiness and texture and revealing some resistance to compression by a texture analyser, when they are in contact with hydrophilic matrices, namely, Frulact’s preparations with different ºBrix, yogurt, and ice cream. Besides, it was possible to draw conclusions regarding other factors, such as the microbiological load present in several coated components and the variation of their internal and external porosity. This last parameter was measured using a scanning electron microscope, where it was possible to obtain images of the surface of some types of cereals, thus being able to analyse it in terms of roughness and porosity.
