| dc.description.abstract | Este projeto consistiu na elaboração de um gelado vegano de cânhamo de avelã e cânhamo com incorporação de pectina, cujo foco foi alcançar uma textura e cremosidade similar ao gelado comercial de avelã da empresa. O componente que confere funcionalidade ao gelado é a pectina, uma fibra com propriedades espessantes, no entanto esta tem de estar presente na quantidade mínima legislada para a alegação de saúde. O cânhamo contém canabinóides que têm um elevado interesse clínico devido ao seu potencial terapêutico, especialmente no tratamento do cancro. Porém este projeto apenas utilizou as sementes de cânhamo (ausentes de THC e CBD) para a produção de uma bebida vegetal que foi utilizada como base do gelado, mas futuramente podem ser introduzidos partes da planta com canabinóides. O projeto foi dividido em três fases, desenvolvimento da bebida vegetal de cânhamo, elaboração da base de gelado e, por fim desenvolvimento do gelado. Através da reologia foi possível comparar as texturas das amostras obtidas com a base, gelado de avelã comercial da empresa. Concluiu-se que a quantidade de pectina necessária para a alegação de saúde tornou o gelado muito duro, perdendo a cremosidade esperada de um gelado. Por outro lado, obteve-se resultados positivos para alegação nutricional “rico em fibra” no qual a base de gelado contendo a bebida vegetal artesanal de cânhamo com 20 g de amido de milho apresentou características semelhantes à base de gelado de avelã comercial. Concluiu-se também que a pectina estrutura e estabiliza o gelado, mas na presença de óleo de cânhamo gera uma matriz muito consistente que influencia negativamente as propriedades texturais do gelado. Em suma, este gelado vegano tem potencial para ser uma alternativa à oferta de gelados atual, sendo ainda necessário otimizar as quantidades de matérias-primas utilizadas no seu desenvolvimento. | por |
| dc.description.abstract | The goal os this project was to achieve a texture and creaminess similar to the company’s commercial hazelnut ice cream. The component that provides functionality to the ice cream is pectin, a fiber with thickening properties. However, it must be present in the minimum legislated amount to make the health claim. Hemp contains cannabinoids that have clinical interest due to their therapeutic potential, particularly in cancer treatment. However, this project only used hemp seeds (which are free of THC and CBD) to produce a plant-based drink which was incorporated into the ice cream. In the future, parts of the plant containing cannabinoids may be introduced. This project was divided into three phases: development of hemp-based plant milk, creation of the ice cream base, and, finally, ice cream development. Through rheology, it was possible to compare the textures of the samples obtained with the company's commercial hazelnut ice cream base. The main challenge of this project was to incorporate the minimum required amount of pectin to make the ice cream functional while creating a dairy-free version that closely mimics the texture of traditional ice cream. It was concluded that the amount of pectin required for the health claim caused the ice cream to lose the creaminess expected. On the other hand, positive results were obtained for the nutritional claim “rich in fiber,” where the ice cream base containing the handcrafted hemp plant-based drink with 20 g of cornstarch showed characteristics similar to the commercial hazelnut ice cream base. It was also concluded that pectin structures and stabilizes the ice cream, but in the presence of hemp oil, it creates a highly consistent matrix that negatively affects the textural properties of the ice cream. In summary, this vegan ice cream has the potential to be an alternative to the current range of ice creams, although it is still necessary to optimize the quantities of raw materials used in its development. | por |
