Historically, in the Western world, women have held in their hands the responsibility for feeding the family, thus occupying a central role in the maintenance and reproduction of society. However, this role has been ignored and their work made invisible, often lacking the deserved recognition of the values behind the daily dedication of these women. To rescue their recipes, their culinary memories, and their voices is, therefore, to give visibility to invisible stories that often escape our eyes. This dissertation investigates the female protagonism in the construction, reproduction, and transmission of culinary knowledge within the domestic universe in the second half of the 20th century in the state of Espírito Santo, Brazil. Our documentary corpus consists of twenty-one culinary manuscripts belonging to eighteen women and considering that orality is the foundation of culinary knowledge, we also sought to hear the voices that echo behind these notebooks, using semi-structured interviews for that purpose. The chronology of this work was defined after contact with the manuscripts, with the temporality represented by the interval between the approximate year of production of the oldest notebook (1939) and the most recent one (1990). The analyses of the notebooks involved quantitative and qualitative aspects, and for the treatment of the accounts and memories obtained in the interviews, we used a categorical analysis that allowed us to better understand the culinary daily life of our characters and the materialization of their knowledge in the recipe notebooks.por
